Can pasta act as a medicine?

Being of Italian extraction, pasta is never too far from my thoughts. Whenever I’m not feeling 100%, a good pasta dish always seems to pick me up. That’s why I’ve started wondering if it’s possible that pasta has medicinal qualities? I’m not sure if it does, but for me it seems to… My medicine of choice is always a good, clean, tomato-based sauce served on a bed of homemade fettucine drizzled with olive oil. Whenever I make sauce – I guess like most of you – I do the normal things. I start with good quality tomatoes, onion, and a super healthy amount of garlic. But the secret of the sauce – for me anyway – is in the veal that I’ve pan-fried earlier. You see I like to cook the veal in the sauce. This brings out a colossal...

Where does our confidence in the organic industry come from?

If you’re a farmer, why do you grow organic food? If you’re a consumer, why do you buy organic food? I’m guessing that you do so because you feel confident that it’s a better option. If you’re a farmer, it probably gives you more opportunity, either directly or indirectly, to market and sell your produce. And if like me you’re a consumer, organic food provides you and your family with an opportunity to enjoy food the way it’s meant to be – free of GMOs, pesticides, hormones, and other nasties. But where does our confidence in the organic industry come from? Is it something that’s intuitive? For some the answer to that is probably yes. But for most of us, myself included, our confidence in organics is gained through experiences,...

What everybody ought to know about trans fat

Obesity is already a major problem in much of the Western world. And with levels of morbid obesity predicted to increase ten-fold within the next twenty years, many health professionals are calling for something to be done now to address the problem. One of the culprits fueling high obesity levels is the inclusion of trans fat in many of the foods we commonly eat. What are trans fats? According to the U.S. Food and Drug Administration, “trans fat is made when manufacturers add hydrogen to vegetable oil – a process called hydrogenation. Hydrogenation increases the shelf life and flavor stability of foods containing these fats”. Where are they found? Trans fats are a key ingredient in processed foods such as margarine, biscuits, crisps,...

Who else is tired of cellulite?

Most of us have it. None of us want it. And it’s almost impossible to get rid of. Cellulite. There – I’ve said it! It’s possibly the only word in the English language that has the capacity to send a room full of confident, successful businesswomen into a cowering pack of wimps. Are we genetically predisposed to feeling guilty about it? If we were that would explain our seeming desire to support the largely fraudulent infomercial-based cellulite lotion and potion industry. If you’ve seen the ads – and most of us have – you’re probably aware of how, with the assistance of a few pills and a tube of extraordinarily expensive cream, you can remove any trace of cellulite from your body within 14 days. Although I’m too old...

More positive foods from someone who cares

Greg Christian is someone who cares. He cares a lot in fact. As founder and Chairman of the Organic School Project, he’s played an important role in bringing positive food choices to thousands of children. We first talked with Greg while undertaking research for our article on organic choices in schools. As a professional chef, Greg doesn’t assume that he has the requisite credentials to teach others what is, and isn’t, healthy. Instead, he simply aims to help young people learn more about positive food choices. What are positive food choices? In this short video, Greg explains exactly what he means by food being “positive”. Essentially, Greg believes food should be sourced respectfully. He emphasizes the need...
