More positive foods from someone who cares

Greg Christian is someone who cares. He cares a lot in fact. As founder and Chairman of the Organic School Project, he’s played an important role in bringing positive food choices to thousands of children. We first talked with Greg while undertaking research for our article on organic choices in schools. As a professional chef, Greg doesn’t assume that he has the requisite credentials to teach others what is, and isn’t, healthy. Instead, he simply aims to help young people learn more about positive food choices. What are positive food choices? In this short video, Greg explains exactly what he means by food being “positive”. Essentially, Greg believes food should be sourced respectfully. He emphasizes the need for...

Towards the end of last summer, I harvested a bumper crop of organically grown peas. They were extraordinary in taste and quality. For several weeks I gathered them before dawn then packed them inside raw calico bags which stacked neatly inside the crisper section of my old twin door refrigerator. I offered them to relatives, friends, and neighbors.  Apparently there was no shortage of families who appreciated receiving small packages of freshly harvested garden peas. After my initial distributions I received a polite telephone request from a local restaurant. One of their patrons mentioned my crop of peas and the chef was hoping to obtain some for his special minestrone. No problem, I agreed. The following day’s sunrise caught me unprepared....

Healthy eating habits and good quality organic foods

One of the poorly understood aspects of nutritional health is the importance of measuring appropriate quantities of food throughout the lifecycle. During teenage and adolescent years, the body requires an additional resource of nutrients and, in many cases, calories to support the average lifestyle which is likely to include a diverse range of sporting, cultural, and social activities. Depending on occupation and other factors, adults usually experience a sharp decline in their physical activity levels commencing around their mid to late thirties. While many perceive this not to be the case, the objective reality has been documented in large scale health surveys. These indicate a series of common factors which include increased dependence on...

Lifestyle choices during pregnancy

At all stages of pregnancy, the ability to make informed dietary and lifestyle choices can have a positive influence on the health and wellbeing of mother and child. Under normal circumstances, the developing foetus depends upon placental efficiency to absorb a rich supply of nutrients from the maternal bloodstream. Because of this close dependence, there are certain situations which can potentially disrupt the normal course of foetal development. For example, there are a number of maternal illnesses and infections which must be avoided or treated promptly to reduce the risk of developmental abnormalities. Because several of these conditions exhibit minimal symptoms, it is beneficial for most pregnant women to undertake a periodic health assessment...

Growing flowers organically

Until recently, there were limited interactions between the cut flower industry and the organics movement. With the exception of dedicated plant breeders, the mainstream and popular flowers were largely grown in chemically treated soils with the assistance of toxic insecticides and spreading agents. In the flower plantations of developing nations, many of these materials are applied so indiscriminately that there is an adverse impact upon the local environment. There are international health surveys which detail neurological and respiratory problems caused by elevated levels of chemical exposure. With the knowledge that some overseas flower plantations utilise child labour, the ethical consumer is obliged to consider purchasing an alternative...

Organic juice - choosing a juicer

Last December I looked at some of the reasons motivating me to continue preparing fresh organic fruit and vegetable juices for my family. For those of you who are interested in making your own juice, I thought I’d take a look at the various technological options available to you. There are many implements and appliances available for making your own juice. These range from the relatively inexpensive to the almost unbelievably overpriced. While the equipment you choose needs to suit your intended purpose, it’s also important for it to fit within the parameters of your household budget. There’s no point forking out money for equipment you’re not going to use after a few weeks. Unfortunately, people often spend good money...

Medicinal herbs and their uses

Throughout history, the medicinal use of herbs has been consistently linked with systems of traditional knowledge. The health philosophies of eastern, western, and indigenous cultures can be understood as integral components of unique world views which are progressively shaped by environmental factors, empirical knowledge, and religious practices. For example, eastern approaches to health and wellbeing must be addressed in the context of the Ayurvedic systems of ancient and contemporary India, along with the Buddhist and Taoist systems which have influenced important regions within Asia. The Western European approach to health was initially shaped by the religious influences of Judaism, Christianity, and Islam. For example, herbal tonics and...

Storage of organic fruit

An essential consideration when storing fresh fruit is to ensure that only the highest quality examples are selected in the first place. As an organic producer, the objective is always to provide a safe, nutrient rich environment, one which enables healthy fruit to develop without the assistance of toxic pesticides and other chemical additives. Fruit which has been nurtured appropriately from the earliest stages will always store more easily, and remain fresher than produce which has been compromised by adverse growing conditions or bad management. There are few long term advantages to be gained from storing crops which are in poor condition. Most fruit can be stored in a variety of ways. Any decision regarding the most suitable approach to...

Food intolerance and chemical exposure

The previously neglected concept of food intolerance has now been widely promoted by medical research into metabolic disorders with a genetic basis. There is also evidence to suggest these intolerances affect the general wellbeing of more individuals than had originally been estimated. Some basic description of events occurring within the gastrointestinal tract can be useful for understanding the concept of food intolerance. Breaking down food The stomach and intestinal walls are designed to break food into the molecular particles which are then used by the body to provide energy, and as a resource for the growth and repair of tissue. Even with the most careful selection of wholesome foods, there are components which are not required and must...

Common skin problems

Extremes of temperature, excessive sun exposure and alcohol consumption may all contribute to the condition telangiectasia, more commonly described as broken capillaries. Whenever these tiny vessels become dilated, they are likely to be visible at the skin surface, particularly around the nose and cheeks. The usual cosmetic treatment is known as sclerotherapy. This involves injecting each capillary with a saline solution, causing the swollen vessels to collapse. Most individuals find the treatment effective, however, there is a possibility that the problem may reoccur within a year or two. The best preventive measure is to avoid extremes of weather, always apply good quality organic moisturiser, and to limit intake of salt, alcohol, and saturated...
